The recipe below makes around 8 small balls as pictured or 5 large balls.
Time: 10 minutes
Makes: 8 small or 5 large
- 1/2 cup Oats (if you’re gluten-free, just up the nuts)
- 1/3 Nuts – Cashews and Almonds
- 2 Tablespoons Cacao or Cocoa
- A couple of chunks of Pumpkin
- 4 Dates
- Desiccated coconut for topping
These are incredibly simple to make. Either grind ingredients or keep pieces as large as you like, mix and shape!
- Boil pumpkin
- Mix the dry ingredients in a blender
- Combine all the ingredients
- Roll into balls
- Refrigerate to set
Boil the pumpkin so it’s soft and can mush easily into the dry ingredients. While it’s boiling, I blend the nuts, oats and dates to be as fine as you like.
The smaller you roll the balls, the quicker they will set.
Generally, I make a batch of these balls on Sunday night and I keep them in the fridge at work for healthy snacks throughout the week. I also take them to pot luck events such as shared lunches.
